Ancient Grain Granola Bars

Makes 9 bars

Ingredients:

  • 2 cups rolled oats
  • ¾ cup quinoa
  • ¼ cup millet
  • 1 ½ cups chopped mixed nuts or seeds
  • ½ cup dried cranberries 
  • ¼ tsp salt
  • ½ cup agave (a lower glycemic index sweetener!) or maple syrup
  • ½ cup peanut butter (just peanuts on the ingredients is best)
  • ¼ cup olive oil
  • 1 tsp vanilla extract

Directions:

Preheat oven to 350 F. Heat a skillet to medium heat to toast oats, millet, and quinoa about 3 minutes. Combine the syrup, sugar, vanilla, oil, and peanut butter in a small sauce pan and heat until melted. Add nuts, cranberries, and toasted grains to a large bowl and stir in salt. Pour melted syrup on top and mix until everything is coated. Press into a parchment lined 9x13 pan and bake 20-25 minutes. These keep best refrigerated.
