Chipotle Chickpea Sandwiches
Ingredients:
1 can chickpeas
1 avocado
1/2 of a red onion
2 stalks chopped celery
Garlic hot sauce to taste
½ bunch chopped cilantro
1/8 cup chopped chipotle almonds
¼ tsp black pepper
½ tsp salt
1 tsp chipotle seasoning
½ tsp cayenne pepper
3 Tbsp lime juice
Directions:
Mash chickpeas with avocado and lime juice. Cut onion, cilantro, celery, and fold into mix with spices, hot sauce, and almonds. Serve on toast or a bun with greens and sliced tomato.
Alternate Flavor: “Classic Chicken Salad”
Substitute:
3 Tbsp lemon juice
1/3 cup fresh chopped dill
Omit:
Lime juice
Chipotle seasoning
Cayenne pepper
