Vegan Dinner Party Tofu Ricotta Pasta

Not just for vegans! I made this for my brother and dad once and they had no idea I had fed them tofu! Pop this dish in the oven right before your guests arrive and enjoy apps while it bakes.

Ingredients:

  • 1 lb whole wheat pasta

  • 24 oz pasta sauce

  • 10 oz frozen spinach

  • 2 Tbsp lemon juice

  • 1 tsp dried oregano

  • 1 tsp dried basil

  • 1 tsp garlic powder

  • 2 Tbsp nutritional yeast (more if desired)

  • 1 package firm tofu

Directions:

Drain and press tofu wrapped in paper towels between two plates to remove moisture. Preheat oven to 400 degrees. Cook pasta according to package directions and thaw spinach in the microwave, about 5 minutes. Mash the tofu with the spices and lemon juice. Combine with spinach. Spray a casserole dish and layer half of the pasta, half of the sauce, and half of the spinach mixture. Repeat, reserving a small amount of sauce to layer on top. Bake 30 minutes.
