Pesto Pea Salad

Serves 2-4 as a side

Ingredients:

  • 2 cups fresh peas
  • 2 Tbsp pine nuts
  • 2 1/2 cups spinach
  • 4 Tbsp pesto (try this vegan avocado pesto)
  • ¼ cup shredded parmesan cheese or vegan alternative

Directions:

Preheat oven to 375 F. To toast pine nuts, line a baking sheet with parchment paper and spread nuts evenly across.Toast 5-10 minutes, stirring every 2-3 minutes, until golden brown. Combine spinach, peas, toasted pine nuts, and pesto in a medium bowl. Mix until peas and spinach are well coated with the pesto. Sprinkle parmesan cheese on top and serve.
