Pasta Primavera with Summer Squash

Serves 4 as a main dish

Ingredients:

  • 1 cup sliced onion
  • 1 cup sliced green or red pepper
  • 1 Tbsp olive oil
  • 1 cup sliced zucchini
  • 1 cup sliced yellow summer squash
  • 4 oz fresh mushrooms, sliced
  • 1 cup fire roasted diced tomatoes
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1 tsp minced garlic
  • 8 oz whole wheat pasta
  • ½ cup Shredded Parmesan cheese (or vegan alternative)

 

Directions:

Cook Pasta according to package directions. In a large saucepan, heat olive oil and sauté onion and pepper until crisp-tender. Add zucchini, mushrooms, and squash and sauté 1-2 more minutes. Pour tomatoes into the saucepan and add basil, oregano, and garlic. Bring to a boil then reduce heat to simmer 6-8 minutes, until vegetables are tender. Toss with pasta and sprinkle cheese if desired.
