Bananas Foster Chia Pudding

Banana's Foster Chia Pudding

Ingredients:

  • 1 can Full Fat Coconut Milk

  • 1 can Lite Coconut Milk

  • 4 Tbsp Chia Seeds

  • 1 Tbsp Pure Maple Syrup

  • 1 tsp Vanilla Extract

  • 1 pinch sea salt

  • 2 Bananas

  • Cooking Spray or 1 tsp Coconut Oil

  • 1/2c Unsweetened Vanilla Almond or Coconut Milk

  • Optional toppings:

    • Additional drizzle of Maple Syrup or Honey

    • Chopped Pecans

    • Hemp Seeds

    • Unsweetened Peanut Butter or Almond Butter

    • Bee Pollen

Directions

  1. The night before, combine full fat and lite coconut milk with chia seeds, vanilla extract, maple syrup, and sea salt in a large jar or leak proof container. Mix well and give it a shake. Refrigerate overnight.

  2. In the morning, preheat a pan to medium with cooking spray or 1 tsp coconut oil.

  3. Slice 1/2 a banana and place on pan, cooking on each side until golden.

  4. Add about 1/4 of the chia pudding mixture to a bowl. Thin with unsweetened vanilla almond milk or coconut milk to desired consistency.

  5. Top with banana slices, a drizzle of maple syrup, and any other toppings you like.

Makes about 4 servings, and is best eaten within 5 days of mixing.
