Bananas Foster Chia Pudding
Ingredients:
1 can Full Fat Coconut Milk
1 can Lite Coconut Milk
4 Tbsp Chia Seeds
1 Tbsp Pure Maple Syrup
1 tsp Vanilla Extract
1 pinch sea salt
2 Bananas
Cooking Spray or 1 tsp Coconut Oil
1/2c Unsweetened Vanilla Almond or Coconut Milk
Optional toppings:
Additional drizzle of Maple Syrup or Honey
Chopped Pecans
Hemp Seeds
Unsweetened Peanut Butter or Almond Butter
Bee Pollen
Directions
The night before, combine full fat and lite coconut milk with chia seeds, vanilla extract, maple syrup, and sea salt in a large jar or leak proof container. Mix well and give it a shake. Refrigerate overnight.
In the morning, preheat a pan to medium with cooking spray or 1 tsp coconut oil.
Slice 1/2 a banana and place on pan, cooking on each side until golden.
Add about 1/4 of the chia pudding mixture to a bowl. Thin with unsweetened vanilla almond milk or coconut milk to desired consistency.
Top with banana slices, a drizzle of maple syrup, and any other toppings you like.
Makes about 4 servings, and is best eaten within 5 days of mixing.
