Vegan French Onion Soup

Ingredients:

  • 6-8 mini sweet onions (or 4-5 large ones)

  • 2 Tbsp olive oil

  • 2 Tbsp minced garlic

  • 8 cups vegetable stock (mushroom broth works great too if you can find it!)

  • 2 Tbsp low sodium soy sauce (add more to taste)

  • 1/2c dry white wine

  • 2 tsp miso paste

  • salt to taste

  • optional toppings: Parmesan, vegan cheese or Parma*, croutons or crusty bread

Directions:

Peel and cut onions into thin slices. Try not to cry too much. Add olive oil to a stock pot on medium heat. Add onions and garlic. Allow onions to caramelize, stir and scrape the bottom of the pan with the caramelized bits to reincorporate. The more times you do this, the fuller the flavor will be. Add a little of the stock as needed to reincorporate. Once caramelized and reincorporated multiple times, add the rest of the stock, soy sauce, wine, and miso paste. Add more soy sauce, salt, or miso paste to taste. Allow to simmer at least 20 minutes, or until the desired flavor is achieved.
