Avocado Pesto

This pesto goes great with roasted veggies and pasta, spaghetti squash with sauteed cherry tomatoes, or thinned out as a salad dressing! Let me know which is your favorite!

Ingredients:

  • 1 avocado
  • 1 cup fresh basil leaves
  • 1 cup fresh spinach or arugula
  • 1 Tbsp lemon juice
  • 1 Tbsp minced garlic
  • salt to taste

Directions

Chop the avocado and add to a blender or food processor. Blend avocado with the lemon juice and garlic. Add a small amount of salt, pepper, or other herbs if desired and blend to taste. Add the  basil and greens and blend until smooth. It's ok if there are still small bits of the leaves intact.
